DBs Oopsies!

Anyone who has followed a low-carb lifestyle has probably tried oopsie rolls.  A very light, delicate bread-like roll made out of eggs and cream cheese.  It can be used as sandwich bread or just eaten with a slathering of butter or almond butter.  I've even made them baked on a cookie sheet, cut them into 3 inch squares and used them as the "noodles" for lasagna.  Tasty!

My friend, DB, attempted her first batch tonight.  Because she is adventurous, she couldn't just make them using the typical recipe...she improvised.  Here is her take on the oopsie roll:

DBs Oopsie Rolls
3 large eggs
Pinch of cream of tartar
3 ounces cream cheese, softened
1 tbls of Protein Egg White Powder-Vanilla
1 tbls greek yogurt-plain
1 tbls parmesan cheese
2 tsp. garlic powder
1 tbls almond meal

Preheat oven to 300 degrees.  Separate the eggs into two bowls.  In one bowl add egg yolks, cream cheese, protein powder, yogurt, parmesan cheese, garlic powder and almond meal.  Set aside.  In another bowl, beat egg whites with cream of tartar. Make sure whites are stiff enough to not slip out of bowl when you tilt it. Then use same beaters to mix up egg yolk mixture.  Carefully, fold yolk mixture into whites.  Dollop batter onto parchment paper lined cookie sheet for rounded buns, or pour batter into cake pan for a flatter bread.  Bake for 20 minutes.

I think they turned out beautifully!  She is planning on eating them as a sandwich tomorrow at lunch.  Can't wait to hear how they taste.  DB....don't keep us waiting!!

  1. DB tried her oopsie sandwich just now. Here are her findings:

    "I've tried 1/2 of my sandwich made with the oopsies and it was delicious! I did take the oopsies out of baggie this a.m. and let airdry on a paper towel for about an hour, as it was a bit moist. That worked great. But, again, because I put the sandwich in a baggie, it got a bit moist again, not bad though. Any suggestions? Maybe put a paper towel in baggie along with sandwich?"

    I think a paper towel would be a good idea...I've often done that with other baked goods and it helps hold down the moisture.

    Anyone else have an answer for her?
